You Gotta Have Hearts…..

A quick tip of our Top Hat in honor of an iconic vegetable finally having its day.  This Sunday, March 16th, is National Artichoke Hearts Day, something near and dear to us as this slightly enigmatic food represents both the logo and spirit of our company.  We feel the combination of this perspicuous veggie adorned with a Top Hat clearly speaks an important story: while the top hat represents bespoke (custom) service, the artichoke itself is a food that requires careful, detailed attention to unveil its full potential.  And, like us, has an amazing heart at the center of it all.

In honor of this funky holiday, here’s recipe from our kitchen for an edible tribute to our delicious mascot.

Artichoke Onion Walnut Muffins

1 ½ c. Onion puree
6 oz. Butter, melted
½ c. Sugar
Eggs
1 ½ tsp.Salt
2¼  c. AP Flour
2 ¼ tsp. Baking Powder
8 oz. Walnuts, chopped + extra whole pieces to top
1-14 oz. can artichoke hearts

Drain artichoke hearts and separate leaves from the bottoms. Line greased mini muffin pans with leaves. Dice bottoms and set aside.

Combine onion, butter, sugar, eggs and salt in a bowl. Mix in flour, baking powder and walnuts. Add diced artichoke and mix until thoroughly combined. Scoop into prepared muffin pans, filling ¾ full. Top with a walnut piece and a sprinkle of kosher salt. Bake at 350° for 15 minutes, should be springy to the touch. Best served warm.
